Thô͘-má-toh kháu-bī ê kùn-á piáⁿ

Thô͘-má-toh 口味的棍仔餅

 

Pún-lâi che-sī chi̍t-chióng chia̍h-khí-lâi khah siāng mī-pau, m̄-koh goá ka m̄-tio̍h hoat-hún ê hun-liōng só͘-í chiah-khí-lâi sī khah chhè ê kùn-á piáⁿ.  Chiah sa-la (salad) ê sî-chūn che ē-tàng phè-leh chiah, (kha-lu-lì) calories bô koân, chiah koh ē pá, kiám-pûi mā ē-sái chiah oh. Í-hā sī ē-tàng choè 16 ki kùn-á piáⁿ ê chhâi-liāu:

本來這是一種食起來卡像麵包, 毋過我加毋著發粉的份量, 所以食起來是卡脆的棍仔餅. sa-la (salad)的時陣這會當配leh, (卡路里) calories 無高, 食閣會飽, 減肥嘛會使食喔. 以下是會當做16枝棍仔餅的材料:

 

mī-hún, 225g 麵粉, 225g

iâm, 1/2 sio-thng-sî  , 1/2 小湯匙

hoat-hún (kàⁿ-bú), 1/2 sio-thng-sî,  發粉(酵母), 1/2 小湯匙

phang-bi̍t, 1 sio-thng-sî  蜂蜜, 1 小湯匙

Kan-á iû, 1 sio-thng-sî  橄仔油, 1 小湯匙

La-lûn-sio ê chui, 150ml  拉圇燒的水(溫開水), 150ml

*Thô͘-má-toh koaⁿ, chhiat-iù  Thô͘-má-toh , 切幼

Gû-lin, 1 toa-thng-sî  牛奶, 1 大湯匙

Moâ-á, 1 toa-thng-sî  麻仔(黑芝麻), 1 大湯匙

 

*thô͘-má-toh koaⁿ ê eng-bûn sī ‘sun-dried tomato’, tio̍h-sī iōng ji̍t-thâu pha̍k-ta ê thô͘-má-toh koaⁿ. Ū nn̄g-chióng pau-chong, chi̍t-chióng sī ta-e, boé-lâi beh chú ê sî-chūn ài seng phàu chui. Chi̍t-chióng sī phàu-tī kûi-hoe-chí iû iōng po-lê koàn-á pau-chong, khui-lo̍h tioh ē-sái chiah.  Nā-sī boé ta-e thô͘-má-toh koaⁿ, phàu-chui liáu-āu, ài nî ho͘ ta, chiah chhiat ho͘ chhùi. Nā-sī boé phàu tī iû lāi-té ê pau-chong, tioh seng kā iû nî chhut-lâi, chiah chhiat ho͘ chhùi.

Thô͘-má-toh koaⁿ khì-bī boē-bái, ē-tàng choe chin choē liāu-lí, í-āu ū ki-hoē chiah-koh kap toā-ke hun-hióng.

*thô͘-má-toh 乾的英文是”sun-dried tomato,” 著是用日頭曝乾的thô͘-má-toh. 有兩種包裝, 一種是乾e, 買來欲煮的時陣愛()先泡水. 一種是泡佇葵花油, 用玻璃罐仔包裝, 開落(打開)著會使食. 若是買乾的thô͘-má-toh, 泡水了後, ()nî()乎乾, 才切乎碎. 若是買泡佇油內底的包裝, 著先kā()nî()出來, 才切乎碎. Thô͘-má-toh乾氣味boē-bái(不醜/不錯), 會當做真濟(很多)料理, 以後有機會才閣kap()大家分享.

 

 

choè-hoat:

1. Só͘-ū ê hún-lui ê chhâi-liāu tó-ji̍p toa-oáⁿ lāi, seng lā ho͘ chiâu-ûn, chiah koh khńg-ji̍p-khì phang-bi̍t kap kan-á iû, koh-chi̍t-pái lā ho͘ chiâu-ûn, chài bān-bān-á ka chui ji̍p-khì, lām choe mī-thoân.

2. Noá-mī-hún-thoân chha-put-to 5 hun-cheng, noá kàu mī-thoân khoàⁿ-khí-lâi kng-bīn. Chiah-koh ka-ji̍p thô͘-má-toh-koaⁿ, kè-sio̍k noá ho͘ chiâu-ûn liáu-āu, iōng chi̍t-thiâu tâm ê bīn-kun kā mī-hún-thoân khàm-khí-lâi, khńg 5 hun-cheng.

3. Mī-hún-thoân pun 16 hūn, noá choe kùn-á hêng, noá-hó ê mī kùn-á khǹg 15 hun-cheng chiah theh ji̍p-khì hang. Tán-thāi ê sî-kan hang-lô͘ khui ho͘ sio jia̍t kàu 150°C.

4. Choè-āu, tī mī-hún kùn-á bīn-téng boah gû-lin, sám moâ-á. Hang 30 hun-cheng, theh chhut-lâi, khǹg ho͘ liâng tioh ē-sái.

 

做法:

1. 所有的粉類的材料倒入大碗內, 先撓乎齊勻(均勻), 才閣khńg()入去蜂蜜kap橄仔油, 閣一擺撓乎齊勻, 再慢慢仔加水入去, lām做麵團.

2. 揉麵粉團差不多5分鐘, 揉到麵團看起來光面.

才閣加入thô͘-má-toh, 繼續揉乎齊勻, 用一條tâm()的面巾麵粉團蓋起來, khńg() 5 分鐘.

3. 麵粉團分16, 揉做棍仔形, 揉好的棍仔khńg 15分鐘, 才提入去烘. 等待的時間, 烘爐開乎燒, 熱到150°C.

4. 最後, 佇麵粉棍仔面頂抹牛奶, 摻麻仔. 30分鐘, 提出來, khńg乎涼著會使.
